How Do Our “Reservations” Work?

In the early days of The Irregardless Cafe, there used to be a line, out front going down the block. It was this way for twenty years. After the fire, we started using waitlists. These lists made the wait much quicker and more orderly. Now we are using the internet and Opentable. Although we are using the word “reservations,” in fact the guests are being put on a list. Our guests, on a weekend, will often encounter a wait. We have always been an extremely busy restaurant. If other restaurants can predict how long guests will remain at a table, why can we not? The other restaurants do not have live music. The music changes everything. If the band is on point, our guests will often stay and listen. We can neither predict whether our guests will stay after dinner nor for how long. We do not rush guests who are enjoying their evening.
